Boost life with superfood

Are you already feeling the strain of the new spring quarter? Is it already a struggle to focus on your classes or wake up in the morning? Maybe you never caught up on your rest during spring break.

Carol Wilson of Superfood Soul Kitchen may have the recipe you need to get your body working more efficiently and help keep you out of the doctor’s office this quarter. On Saturday mornings from 9-11 a.m., you can find Wilson at the Forsyth Farmers’ Market wielding a blender, mixing fresh, healthy superfood samples for a free cooking demo.

The demo is part of the market’s “Bring it Home” program, a campaign designed to encourage all members of the community, especially low-income families, to strengthen their bodies through the combination of exercise and a healthy diet. Shoppers participate in an on-site exercise activity and Wilson’s superfood demonstration.

Since it’s free, you won’t have to stretch your student budget. And as extra incentives, the first 25 shoppers to complete the activity receive $5 in market tokens and everyone who participates gets to take home a copy of Wilson’s recipe. Tokens can be used to purchase goods at any vendor stand in the market.

According to Wilson, superfoods are a special category of food found in nature that are both “low in calories and high in nutrients.” They are also superior sources of anti-oxidants and essential nutrients—nutrients we need but cannot make ourselves.

“Superfoods can help with insomnia, increase energy and stamina, balance hormones and enhance your general health,” Wilson says. “So far we’ve made original recipes with goji berries, chia seeds, maca root and fenugreek. We’ll try to introduce a new superfood for each Saturday at the farmers’ market.”

Wilson doesn’t get paid by the Forsyth Farmers’ Market to share her superfood recipes. For, it is more about helping others than making a profit.”People need help to balance their bodies and make them work more efficiently,” says Wilson. “I just want to help them achieve that.”

“Five Alive Superfood Fruit Smoothie” created by Carol Wilson of Superfood Soul Kitchen

Ingredients:

2 cups orange juice

1 banana

½ cup fresh strawberries

¼ cup fresh pineapple

1 tbsp of maca powder*

Instructions:

In blender, combine orange juice, strawberries, pineapple, banana and maca powder. Blend until smooth. Serve chilled or frozen. Sweetener is optional.

*Maca (ma-kuh) is a plant native to Bolivia and Peru. Nutritionists report the plant increases energy and improves hormonal balance.
