Dorm Dining: Personal Cheesecake

Step away from the microwave, folks. In celebration of how hot it’s been recently we’re doing a cool – barely any cooking involved– kind of recipe. This is an easy sweet pastry for those steamy days when the idea of a cool glass of white wine and dessert seems like the ideal dinner. So back away from the microwave, crank up that AC and gather your materials for this fun little recipe.

  • Set Time: 1 hour
  • Feeds: Roughly 3 people

Ingredients and Supplies

  • •Whisk
  • •2 medium sized bowls
  • •1 small microwavable bowl
  • •Fork
  • •¾ cups of whole milk (soy milk for a softer texture)
  • •A splash of vanilla
  • •Jello © no bake cheesecake mix (there are other brands, but this one works well)
  • •½ tablespoon of White Sugar
  • •5 tablespoons of butter

Preparation

  1. Microwave 1 ½ tablespoons of butter in the small  bowl until it is completely melted.
  1. Measure 5 tablespoons of the crust mix and add it to the butter.
  2. Measure ½ tablespoon of white sugar and add it to the mixture, use the fork to combine everything into a filling mixture.
  3. Spread the crust into one of the large bowls, creating a thin layer along the inside edge.
  4. Measure 9 tablespoons of the mixture and pour into the other large bowl.Cheesecake 5
  5. Measure ¾ cups of whole milk and add it to the filling mixture.
  6. Add a splash of vanilla to the filling mixture.
  7. Mix the filling with the whisk for 3 minutes. The filling should become thicker and thicker.
  8. Pour into the bowl with the crust. Flatten the top and then put into the fridge for an hour to set.
  9. Mix with fresh berries and enjoy after the cheesecake has set.
