This healthful recipe will make dessert eating a guilt free experience

I don’t know about you, but I love to treat myself during the summer, especially to a delicious dessert. But, I hate feeling guilty after having my after-dinner treat. So, I decided to look into desserts that you I wouldn’t feel bad about eating later and that aren’t quite so bad for your bikini bod, but still a great treat during the summer months.

I found some great recipes for healthful desserts online at the EatingWell website, the Cooking Light website and the Food Network website. I decided to try one of the recipes out for myself. This recipe is from the Fitness Magazine website, and the dessert is a fresh raspberry-mousse almond crumb cake.

The recipe calls for:
1 cup unbleached all-purpose flour
1/3 cup sugar
1/8 teaspoon sea salt
5 tablespoons unsalted butter, chilled, cut into small pieces
1/2 cup low-fat vanilla yogurt
1 1/4 teaspoon pure vanilla extract
1/2 teaspoon almond extract
1 large egg
1/2 teaspoon baking powder
1/4 teaspoon baking soda
4 ounces light cream cheese, room temperature
1/3 cup raspberry jam or preserves (preferably seedless)
3/4 cup fresh raspberries (optional)
3 tablespoons sliced almonds

This crumb cake has only 250 calories, five grams of protein, 30 grams of carbohydrates, 12 grams of fat and one gram of fiber per slice. So, it’s truly guilt free compared to many of my summer dessert favorites. This dessert was easy to prepare and tasted great. The sweet mousse and cake was a perfect balance to the semi-tart raspberries, which I chose to use even though they were optional in the recipe. The only advice I can give about preparing this dessert is make sure that the pan you cook it in is deep enough, still having room in it after the batter is poured because mine did not have a lot of room left and some batter bubbled out while it was cooking.
